Tempt My Tummy Tuesday... Anniversary Giveaway Edition!!



Happy Anniversary to Tempt My Tummy Tuesday. When Lana and I came up with the idea, one year ago to host TMTT, we never expected it to be what it has become. We now average over 70 participants, each week! We have discovered some wonderful recipes and made some great blog friends through TMTT. Lana and I want to thank you all for your faithfulness to participate, sharing your recipes tips and ideas. As a THANK YOU we are hosting a cookbook giveaway TODAY!!

The winner of the giveaway will receive our FAVORITE cookbook. Both Lana and I were given this cookbook as wedding gifts. I know that we have used many recipes from our books, through the years. Having been born and raised in Austin, Texas, we are proud the cookbook was created by the Austin Junior League.

The giveaway will end at Midnight Tuesday night, July 7th. I will use Random.Org to generate the winner. I will announce the winner by Wednesday afternoon. Please make sure that I can reach you via email.

Okay, now to this weeks carnival!
Last week I cooked a meal for our neighbor. They were just home with a newborn. I remember how much I appreciated meals brought to me, after Grace was born. I found these recipes and was eager to share them with my friends. I made Bacon-wrapped pork tenderloins (YES, PIG WRAPPED IN PIG!!), Southern Rice, salad, and Lemon Cake. Since we had to eat, as well, I doubled the recipes and my family also enjoyed a very yummy meal, that evening!

Here are the recipes.

Bacon-Wrapped Pork Tenderloin

2 small pork tenderloins
6 slices bacon, to wrap ( I used center cut bacon)

Marinade:
1/2 cup soy sauce ( I used reduced sodium)
1 Tbsp dried minced onion
1 Tbsp sugar
2 Tbsp red wine vinegar
2 garlic cloves, minced ( I used minced garlic in a jar)
1 tsp red pepper flakes

Wrap bacon around tenderloins, securing with toothpicks. Place in large resealable bag or baking dish. Mix marinade ingredients together and pour over pork. Marinate in refrigerator for 4 hours or overnight. Disard marinade. Place tenderloin in foil-lined roaster pan and roast uncovered at 350 degrees for about 45 minutes. Let rest for 10 minutes, then slice into 1/2 '" medallions. May be served over rice with pan juices.


Southern Rice

1 medium onion, finely chopped
2 Tbsp butter
1 1/2 cup rice
2-14oz cans chicken broth ( I used reduced sodium)
1 tsp salt

In large skillet, saute onion in butter until translucent. Add rice and cook until lightly browned. Add broth and salt and bring to boil. Reduce heat and simmer covered for about 20 minutes.

I took the meal to the neighbor with the tenderloins resting on the rice. Here is a picture of the meal prepared for our neighbors.


Lemon Cake

1 (18.25oz) lemon cake mix
3 oz pkg. lemon gelatin (I have seen it made with lemon pudding as well.)
3/4 c. vegetable oil
3/4 c. water
4 large eggs
dash of salt

Glaze

1 cup powdered sugar
1/4 c. fresh lemon juice (about 2 lemons)

In large bowl, beat all cake ingredients together with electric mixer until smooth. Pour mixture into bundt pan prepared with nonstick spray. Bake at 350 degrees for about 45 minutes. Cool 10 minutes before removing to a serving platter. Meanwhile, prepare glaze by stirring together powdered sugar and lemon juice. Brush cake with the glaze.

I love living somewhere that people will cook for others when they need it. It's so great! My mom used to do bacon wrapped meat, but it was never marinated or done anything like what you describe. YUM! :)

I have been saving my recipe for a special occasion.... your anniversary celebration! Deep Fried Oreos are definitely a celebration food and I thought they were appropriate for your aniversary day!

Wow - your recipes look delish. I'm not much on pork, but the marinade sounds very much like one I use with beef, and how can it be bad if it's wrapped in bacon??? ;) The lemon cake looks scrumptious.
