So, I am trying to better manage what I eat and working on losing some weight. I am letting Weight Watchers Online join me in the journey. I am not a big "go to meetings" person. So, this is working well for me....so far. I am more aware of the food I am eating and keeping track of the "points" for the food. With that in mind, I am posting a recipe that I found on the Weight Watchers website. One serving is equal to 5 points. So, if you really want the dessert and have been managing your points well, throughout the day, go for it.
Of course if you don't care about the calories and fat..... HERE is the link to the Cream Cheese Pound Cake that I posted in March as a TMTT recipe.
Vanilla Pound Cake
| | 1 spray(s) cooking spray |
| | 2 large egg(s) |
| | 3 large egg white(s) |
| | 2 1/2 tsp vanilla extract |
| | 1 tsp almond extract |
| | 8 oz light cream cheese |
| | 3 1/2 tbsp unsalted butter |
| | 1 1/3 cup(s) sugar |
| | 3/4 tsp baking powder |
| | 1/4 tsp table salt |
| | 1 3/4 cup(s) all-purpose flour |
- Preheat oven to 350ºF. Coat a 9-inch loaf pan with cooking spray.
- In a medium bowl, whisk together eggs, egg whites, vanilla extract and almond extract; set aside.
- In a large mixing bowl, using an electric mixer, beat together cream cheese and butter until blended. Beat in sugar, baking powder and salt until blended. Beat in flour and egg mixture, little by little, beginning and ending with flour.
- Pour batter into prepared loaf pan and bake until a wooden toothpick inserted in center of cake comes out clean, about 55 to 65 minutes.
- Cool cake in pan on a wire rack. Cut into 12 slices and serve. Yields 1 slice per serving.

Cream cheese is such a great addition to pound cake. The idea of not adding pounds to ourselves when eating said cake is a great thing!

I made a cake kind of like this tonight. Butter cake. It got gobbled up immediately. Strawberry shortcake is such a wonderful "Welcome to Summer" dessert!

I did WW online a few years ago and loved it - until I became obsessed with points! - I felt that was ALL I thought about! LOL

Oh no, you're trying to lose weight and here I am posting about homemade ice cream. :) I do like the idea of the less fattening pound cake though. Wonder how that would be served with my homemade ice cream. LOL!

yummy!! i take strawberries , mash them up with a little sugar and put them over angel food cake and top with whipped cream for a semi-healthy desert!! thnx for a great recipe!! take care!!

Yum!! I LOVE pound cake! Not sure what happened to Mr. Linky but hook up to me for some fantastic Sticky Chicken! The pound cake would make a wonderful dessert!
And if I'm trying to lose weight....I go low carb. Sadly, anything with sugar and bread is not my friend.

Mine is not a very good recipe for losing weight, but since it's a birthday cake I don't think it should have to be...everyone should cheat a little on their birthday :)
