Tempt My Tummy Tuesday...Curried Chicken, Rice, and Fruit Salad

Tempt My Tummy Tuesday is growing. How exciting to meet so many great cooks, each week. We had a new record of 84 participants, last week. So many tempting recipes. I wish I had time to make them all! Thank you for joining us.

I am trying to find new healthy meals, for my family. Weight loss is on my mind, but I want to keep the flavor and make the meals filling and satisfying for everyone in the family. Here is one recipe that I found and want to try. This recipe comes from Skinny One-Pot Meals by Ruth Glick.


Curried Rice, Chicken, and Fruit Salad

(6-7 servings)

Dressing
  • 1/4 cup reduced-fat mayonnaise
  • 1/2 cup non-fat buttermilk
  • 3 Tbsp non-fat dry milk powder
  • 2 tsp mild curry powder, or to taste
  • 1/2 tsp salt, or to taste (optional)
  • 1/4 tsp white pepper
Salad
  • 1 lb. boneless, skinless chicken breast meat, trimmed of all fat, cooked, and cut into bite-sized pieces.
  • 1- 15 1/4 oz can juice-packed pineapple tidbits, well drained
  • 2 1/4 cups cooked long-grain white rice
  • 1 large red bell pepper, seeded and cubed (you can substitute a green bell pepper)
  • 1 1/2 cups green seedless grapes
  • 2 Tbsp sliced green onion tops
Dressing: Place mayo in large serving bowl. Gradually whisk in buttermilk. Stir in non-fat milk powder, curry powder, salt, and pepper.

Salad: Add the well drained pineapple to the dressing mixture. Add rice, chicken, red pepper, grapes, and green onions to bowl with salad dressing. Toss to coat well. Cover and refrigerate several hours, stirring occasionally. Garnish with additional chopped green onions, if desired.

That sounds good. I wish red peppers would go down in price here. I like them much better than green but currently they are almost $3 a pound.

Oooo yum! I love the idea of this one. This sounds really different but good. Except for all the reduced fat stuff that I'd have to replace with the "real" stuff. I'd rather eat less of the good stuff. Is that wrong? :)
