Tempt My Tummy Tuesday....Shredded Savory Pork

I found a wonderful magazine. It is a special editions Better Homes and Gardens Special Interest Publication : MEXICAN. It has tons of great Mexican recipes and tips for cooking tasty Mexican food. I enjoyed the magazine so much. I then found some of the same recipes on the Better Homes and Gardens website. Here is the online link to the recipe I am highlighting, from this publication. Shredded Savory Pork
(great for shredded pork tacos, or tamales)
  • 1 2-pound boneless pork loin blade roast
  • 2 large onions, quartered
  • 3 fresh jalapeno peppers, cut up
  • 8 cloves garlic, minced
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp dried oregano, crushed
Stove top recipe: Trim fat from meat. Place roast in a large saucepan or Dutch oven; add enough water to nearly cover. Stir in onions, jalapeno peppers, garlic, coriander, cumin, oregano, 1/2 tsp salt, and 1/2 tsp ground black pepper. Bring to boil; reduce heat. Simmer, covered for 2 1/2 to 3 hours or until very tender.

Remove meat from liquid; discard cooking liquid. When cool enough to handle, shred the meat. Use as a filling for tamales or tacos. Makes about 3 cups of cooked meat.

Slow cooker directions
: Trim fat. Cut meat to fit in a 3 1/2 to 4 quart slow cooker. Add 1 cup water and the remaining ingredients. Cover and cook on low-heat setting for 8 -10 hours or on high-heat setting for 4-5 hours.

According to the magazine, this shredded pork will freeze well, for up to 3 months.

I will be making this for tacos. Just get all your favorite fixings for tacos and you have a yummy meal!

I haven't done shredded pork with a Mexican flare. I have only done it with bbq sauce. Might just have to give this a try! :)

I don't usually buy pork, but I am sure this would taste awesome with beef too. I do something similar for tacos and it is so good!

My sister is going out of town to Washington, D.C. for the first time since the twins were born and I know that my BIL won't have time to cook. I am going to make this so that I will have enough for all of us! Thanks! It looks delicious and perfect timing because BIL is kind of a picky eater.

I haven't done shredded pork quite like this-I usually just make an extra large roast in the crock pot then shred the left overs & add a partial jar of salsa to Mexican-ize it! I'll have to try this one!

I'm only now learning that pork doesn't have to mean my mom's nasty dried out pork chops (although I still can't eat those). A friend has a great shredded pork recipe, and this sounds like a neat twist on it. I'll definitely have to try it. Thanks!
