Tempt My Tummy Tuesday.... Main Dish for your New Year's Eve Party

Hello everyone and welcome to Tempt My Tummy Tuesday. My sister, Lana, and I co-host this blog carnival. We share recipes, kitchen and cooking tips, restaurant reviews, and anything food related that you want to share. You know the rule of a blog carnival, please mention the blog or TMTT in your post and link back to us. Don't forget to use Mr. Linky, down below.
(If your post was DELETED, go HERE for an explanation.)

If you are having a few people over for a New Year's Eve party and dinner, then I have the main dish for you. First of all, you need to decide that you have NOT eaten all the calories for the year and are in need of more BIG Calorie consumption. Having said that, this recipe is wonderful. It is perfect for a large gathering and everyone will be pleased. (Thanks to me dear friend, Lori, for the recipe.)

Chicken Napoli

  • 2 1/2 lbs cooked chicken, cut up into small pieces
  • 16 oz, linguine, cooked according to pkg. instructions
  • 8 Tbs butter
  • 1/2 cup flour
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 2 cups mayonnaise
  • 2 cups sour cream
  • 2 cups fresh parmesan cheese, divided
  • 1/4 cup lemon juice
  • 2/3 cup white wine
  • 1 tsp garlic
  • 1 tsp cayenne
  • 2 tsp dry mustard
  • 2 tsp salt
  • 16 oz. fresh mushrooms, cooked for a few minutes in wine
  • paprika (for garnish)
In a medium bowl, mix mayonnaise, sour cream, 1 1/2 cup Parmesan, lemon juice, wine and seasonings. In a skillet, melt butter, add flour and cook until mixture makes a thick paste. Slowly add cream and cook until thickened, stirring constantly. Add chicken broth and heat through. Place cooked pasta in a large bowl and toss with sour cream mixture and cooked sauce; then add mushrooms and chicken. (It will be very saucy, but it thickens as it bakes.) Bake at 350 degrees for about 30 minutes. When out of the oven, garnish with remainder of grated Parmesan and sprinkle with paprika.
(Just a side note: My husband does NOT like mushrooms. However, he LOVED this dish. He had no problem, moving his mushrooms over to the edge of his plate, while he consumed large portions of pasta and chicken.)
Happy New Year. Thank you for making 2008 a great new adventure. My new blog friends are great and have opened a whole to new for me; this stay at home mommy. I am looking forward to our continued friendship, in 2009.

That sounds really good. I am not a fan of mushrooms either, but I could probably just leave them out. Fortunately I am not cooking anything for New Years, but this looks like a great addition to our menu!

That sounds delicious! You are a doll for linking me up. I am borrowing hubs' computer while he and Big Guy practice their skills on the Guitar Hero.

I love TMTT! It is one of my favorite times of the week and I never do my grocery shopping before I have a chance to cruise all the great new recipes!

It sounds wonderful but a bit complicated! Maybe I'll try it after the kids get back to school-when I can concentrate better! lol

Yummy. If you leave the mushrooms out, does it alter the taste at all? I will have to give this recipe a try!

MMMMM, now this sounds scrumptious! We all love mushrooms here. I'm going to have to try this.
Two things, I haven't been here in a while as I usually go by the blog list on my blog of current updates. I finally scrolled through them all and realized that your blog shows no post for a long time. Thankfullly I decided to check and sure enough, I've missed a lot. :(
Plus, I keep forgetting about Temp my tummy Tuesdays. I promise to try to do better. (blushing)
Hopefully things will slow down here soon and I'll get my head back on. Auuuggghhhh! Ha ha.
Glad to see you had a beautiful, blessed Christmas, hope your New Year is wonderful!
