Tempt My Tummy Tuesday..No-Bake Pumpkin Cheesecake

Hello everyone and welcome to Tempt My Tummy Tuesday. My sister, Lana, and I co-host this blog carnival. We share recipes, kitchen and cooking tips, restaurant reviews, and anything food related that you want to share. Today I am sharing a No-Bake Pumpkin cheesecake. Won't this be great for Thanksgiving? It is easy. You know, I LOVE easy!
  • 1 pkg (8 oz) cream cheese, softened
  • 1 cup canned pumpkin
  • 1/2 cup sugar
  • 1/2 tsp. pumpkin pie spice
  • 1 tub (8oz) Cool Whip Whipped Topping, thawed, divided
  • Honey Maid Graham Pie Crust (6oz)
Directions: Beat cream cheese, pumpkin, sugar and pumpkin pie spice with electric mixer on medium speed until well blended. Gently stir in 2 1/2 cups of the whipped topping. Cover and refrigerate remaining whipped topping for later use. Spoon cream cheese mixture into crust. Refrigerate 3 hours or overnight. Serve topped with remaining whipped topping. Store leftover cheesecake in refrigerator.

That sounds really simple. I might have my daughter make it for Thanksgiving since she is a fan of pumpkin and cheesecake!

I have all of those ingredients on hand and will have to try out that recipe. My mom was going to make a pumpkin pie but this one looks easier than her recipe. Thanks for sharing!

I've made this , only with peanut butter, I wasn't sure it'd work seeing that the cool whip makes it very soft but it sets up very well,so this just has to be good!
